Vegan Cashew Cheese

Ingredients 

300 gms cashews (soak in water for 4 hours)

juice of 1 lime

1 tablespoon olive oil

2 tablespoon nutritional yeast

chopped chives

sprinkle of black sesame seeds or pumpkin seeds

pinch of salt

2-3 tablespoon of water (should it be required)

 

Method 

In a food processor add all the above ingredients and blend for few minutes. The yeast and cashew combined makes a creamy looking paste. If its too thick you can add a little water to smoothen it out. Remove it in a bowl and sprinkle with sesame seeds. Keep in the fridge for an hour to firm it up a bit. It will stay for 2-3 days in the refrigerator .
