Ingredients
- 1 cup natural peanut butter (i like to make my own)
- 1/4 cup maple syrup
- 2 teaspoons vanilla extract
- 1 1/2 cups rolled oats
- 1/2 cup unsweetened desiccated coconut
- pinch of sea salt
- 2-4 teaspoons water
Method
- In a mixing bowl, stir together the peanut butter, maple syrup and vanilla extract.
- Stir in the oats, coconut and salt until well combined. If the mixture doesn’t hold together well when pinched together, add the additional water, a teaspoon at a time until the mixture holds together well
- Form 1 inch balls by pressing about 1 tablespoon of the mixture together. Roll it and pinch it with your fingers on the palm of your hand.
- It is good to stay well for up to a 1 week in the fridge. Remove it 5 minutes before eating to warm up at room temperature.
