Stir fry tofu and Vegetable

I love this stir fry. Its my go to food for a pick me up or a fill me up. Its gluten free, tastes great, has a beautiful natural sweetness and very satisfying.

 

Ingredients

  • 1 packet of Rice Noodles (please follow instructions on packet for boiling)
  • 1 red bell pepper sliced finely
  • 1/2 carrot sliced long and thin
  • 1/2 zucchini sliced long and thin
  •  handful of sugar snap peas
  • handful of basil leaves
  • a few sliced radish
  • 1 clove of garlic sliced
  • 300 gms of silken tofu (i use the firm variety and cut it into squares)
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 3 tablespoon tamari(gluten free soy sauce)
  • 1 tablespoon apple cider vinegar
  • salt and pepper to taste

 

Method

Cook the rice noodles and keep aside.

In a pan heat the oil and add the garlic. Add all the vegetables (not the basil and tofu) and stir fry for a few minutes.

Remove in a bowl and keep aside.

In the same frying pan add the cooked rice noodles and vegetables and toss it together. Add the tofu and basil on top and pour the tamari, apple cider vinegar, salt and pepper to taste and give it a quick toss. Its ready to be served 🙂
