Plus, they’re nut-free and can be easily customized with different toppings like hemp hearts, shredded coconut, or cocoa powder depending on your mood. For an indulgent touch, dip them in melted dark chocolate and chill until the coating firms up.
Ingredients:
- 1 cup pitted Medjool dates
- 6 tablespoons hemp hearts
- 3 tablespoons cocoa powder or raw cacao
- 2 tablespoons shredded coconut
- 1 tablespoon virgin coconut oil
- 1/4 teaspoon fine sea salt
- 3 tablespoons chopped dark chocolate (optional)
- 1–3 teaspoons water (if needed)
Toppings:
- Shredded coconut
- Hemp hearts
- Cocoa powder or raw cacao
- Melted dark chocolate
Instructions:
Place the dates in a food processor and pulse until they form a sticky ball.
Add the remaining ingredients (hemp hearts, cocoa powder, coconut, coconut oil, salt, and chocolate, if using). Process until everything is well combined and smooth. If the mixture is too dry, add water 1 teaspoon at a time.
Shape the dough into small balls and coat them with your chosen toppings.
Chill the balls in the freezer for 20 minutes or enjoy immediately!
Store any leftovers in an airtight container in the fridge for up to a week, or freeze for 4-8 weeks.
Tip: If your dates are too dry, soak them in hot water for about 15 minutes, drain, and squeeze out the excess water. For added flavor, experiment with a drop of peppermint or orange extract!
